Chicken Taquitos
2 Tbsps. unsalted sweet cream butter
¼ cup diced onion
1 tsp. garlic powder
1 can diced chilies and tomatoes
3 cups shredded rotisserie chicken
1 8oz block cream cheese
1 cup shredded Mexican cheese blend
Corn tortillas
Melt butter in medium skillet. Add onion and cook until translucent, about 3-5 minutes. Add garlic powder and diced chilies and tomatoes. Heat for one minute and add chicken and cream cheese. Mix well and cook until heated through and cheese is melted. Heat tortillas in skillet until soft and pliable. Place chicken mixture down the center of each tortilla and top with shredded Mexican blend cheese. Fold over and roll into taquitos. Seal with toothpick. Place in air fryer basket leaving some room between each. Set temperature to 400°F and set timer for 8 minutes. Serve with sour cream, salsa or Queso or some combination of the three. Yum!
