Stuffed Cheesy Pockets
2 cups shredded mozzarella cheese
½ cup almond flour
2 large eggs
Cooked chicken, shredded or other meat of choice
Other shredded cheese for filling, I used Italian blend
In large microwave safe bowl, place mozzarella and almond flour. Microwave for 1 minute. Remove and stir until ball of dough forms. Microwave an additional 30 seconds if needed to completely melt cheese. Crack eggs into bowl and mix until smooth dough forms. Wet hands and lightly knead dough for 20-30 seconds. Tear off two equal sheets of parchment paper. Place dough ball between the two sheets. Use rolling pin to roll out dough to 1/4” thickness. Use knife or pizza cutter to slice into equal rectangles or squares large enough to stuff and fold over. Place small amount of meat on half of each square and top with shredded cheese. Fold each piece of dough over filling and pinch closed. Lightly spray air fryer basket with cooking spray. Add dough pockets to air fryer basket so they don‚t touch. Set temperature to 350°F and set timer for 5 minutes. Flip dough pockets and cook for another 5 minutes or until golden brown.
