Sausage Tortellini Soup
1 pkg. smoked sausage 1 small yellow onion, diced 2 cups shredded carrots 2-3 tsps. minced garlic, more or less to taste ¼ cup all-purpose flour 5 cup chicken broth, more if needed as the tortellini cooks 14oz refrigerated cheese tortellini ¼ tsp. sea salt ½ tsp. ground black pepper ½ tsp. Italian seasoning 6oz fresh chopped arugula 2 cups heavy cream In large stockpot set over mediumhigh, cook sausage, onion and carrot for 5 minutes or until vegetables are softening. Add garlic and sauté for an additional 2 minutes, or until fragrant, stirring occasionally to prevent it from burning. Whisk in flour and cook for 1 minute. Gradually add in chicken broth and whisk to combine. Continue cooking until mixture begins to simmer, then reduce heat to medium-low and simmer for 6 minutes. Add tortellini, salt, pepper, Italian seasoning, arugula and heavy cream. Simmer for 5 minutes, or until tortellini is fully cooked and soup is heated through.
