Blueberry Orange Bread
2 cups all-purpose flour 1 cup sugar 1 tsp. baking powder ½ tsp. baking soda ¼ tsp. salt 1 egg ½ cup orange juice ⅓ cup water 2 Tbsps. unsalted butter, melted 1-2 tsps. orange extract, more or less to taste ¾ cup blueberries In large bowl, combine flour, sugar, baking powder, baking soda and salt. In another bowl, combine egg, orange juice, water, butter and orange extract. Add to dry ingredients just until combined. Fold in blueberries. Pour into greased and floured 8-in. x 4-in. x 2-in. loaf pan. Bake at 350°F for 6575 minutes or until toothpick inserted near the center comes out clean. Cool for 10 minutes.
