Cajun Shrimp Pasta
=1lb uncooked pasta of choice, I used rotini 2 Tbsps. unsalted butter 16oz smoked sausage, cut into 1/2-inch-thick slices 1 medium onion, diced 2 cups chicken broth 2 cups frozen corn kernels 6oz cream cheese ½ cup heavy cream 2lbs raw, peeled and deveined large shrimp 2½ tsps. Cajun seasoning, more or less to taste Cook pasta in water according to package directions. Drain and transfer to large serving bowl. Cover to keep warm if not ready to use. While pasta cooks, melt butter in Dutch oven over mediumhigh heat. Add sausage and onion, and cook, stirring occasionally, until sausage is browned and onions have softened, about 5 minutes. Stir in broth and corn. Bring to boil and reduce heat to medium-low. Simmer until corn is tender-crisp, about 5 minutes. Add cream cheese and heat until melted. Add heavy cream and heat for 2 minutes. Add shrimp and Cajun seasoning to mixture. Stir to combine. Cover and cook until shrimp are done, 3 to 5 minutes. Remove from heat. Add shrimp mixture to pasta and toss gently to combine. Serve immediately.
