Broccoli Pasta Salad
1lb fresh broccoli, rinsed and drained 1 cup mayonnaise ⅓ cup sugar ⅓ cup red wine vinegar ½ tsp. ground pepper 12oz pasta ⅓ cup red onion, diced 2 cups seedless red grapes, halved 8 cooked bacon slices, crumbled Cook pasta in water according to package directions. Drain and run cold water over pasta until it’s cold. Transfer to large serving bowl. While pasta cooks, cut broccoli from stems and separate florets into smaller pieces using paring knife. Peel away tough outer layer and finely chop stems. In small bowl, add mayonnaise, sugar, pepper and red wine vinegar. Whisk until smooth. Add broccoli and grapes to pasta. Pour dressing over mixture and mix well to coat. Cover and chill 3 hours or overnight. Add bacon to individual serving dishes when ready to serve. Serve immediately.
