Almond Cherry Granola Bars
2 cups rolled oats ½ cup, plus 3 Tbsps. almond butter ½ cup dried cherries ½ cup white chocolate chips ¼ cup honey Prepare 8×8” baking dish with parchment paper, leaving some overhang on sides for easy removal. In bowl of stand mixer, combine oats and chopped cherries. Add honey and almond butter and mix well. Add white chocolate chips and stir until combined. Scoop granola mixture into prepared baking pan and firmly press into even layer. Cover mixture with parchment paper and chill in freezer for 15-20 minutes until firm. Remove from freezer and transfer to cutting board using overhang on sides. Chop into bars and serve. Store in refrigerator. Enjoy!
