White Chocolate Pumpkin Cookies ¼ cup brown sugar ¼ cup white sugar ½ cup salted butter softened ½ cup pumpkin puree ¼ tsp. salt ½ tsp. cinnamon 1 tsp. pumpkin pie spice ½ tsp. baking soda 1½ cups all-purpose flour ½ cup white chocolate chips ¼ cup sugar for flattening cookies Preheat oven to 375°F. Line baking sheet with parchment paper. In medium size bowl, cream together sugars and butter. Add pumpkin and mix to combine. Add in spices and flour and mix well. Fold in white chocolate chips. Drop batter by tablespoons onto prepared baking sheet. Use flat bottomed glass with bottom dipped in sugar to slightly flatten cookies before baking. Bake 9-11 minutes. Allow cookies to cool 5 minutes on baking sheet. Transfer to cooling racks to cool completely. Store in airtight container.
