Easy One Pot Rice
4 Tbsps. butter 1 onion, diced 14oz pkg. smoked sausage, sliced 1 tsp. turmeric 1 pkg. Sazon Goya seasoning 3 cups instant brown rice 3 cups no salt added chicken stock or broth 1 12oz pkg. small shrimp Lemon wedges for serving, if desired Melt butter in large skillet. Soften onion for 5 minutes without browning. Add sausage and cook 5 minutes or until slightly browning. Stir in turmeric, Sazon Goya and rice until coated by butter and well mixed. Pour in stock. Bring to boil and simmer for 15 minutes, stirring occasionally. Add additional stock if all moisture starts to vanish but rice still is not softened completely. Stir in shrimp to cook for final 5 minutes of cooking or until rice is cooked through and shrimp is pink. Check seasoning and adjust if needed. Serve immediately with lemon wedges if desired.
