Peach Breakfast Casserole
1 8oz pkg. cream cheese, cubed 3 cups frozen sliced peaches, thawed and cut into 1” pieces 1 12.4oz can refrigerated cinnamon rolls with icing (8 count) ½ cup powdered sugar 1 tsp. pure vanilla Preheat oven to 350°F. Spray 13x9” baking pan with nonstick cooking spray. Microwave cream cheese 30 seconds in large microwave safe bowl. Using back of large spoon, mash and stir cream cheese. Microwave another 30 seconds if needed to completely soften. When very smooth, add powdered sugar and stir until smooth. Add vanilla and stir to combine. Add peaches to bowl and stir. Set aside. Break open cinnamon rolls, save icing for later. Cut each cinnamon roll into 4 pieces. Add cinnamon roll pieces to bowl of peaches and cream cheese, stir to combine. Spoon mixture into prepared baking dish. Bake for 35 - 40 minutes or until bubbly around edges and golden on top. Cool 10 minutes. Drizzle icing over top of casserole. Serve warm.
