Hot Cocoa Muffins
½ cup sugar 1½ cups flour ½ cup hot cocoa mix (about 2.5 packets) 1 Tbsp. baking powder ¼ tsp. salt 2 eggs, room temperature 1 Tbsp. pure vanilla extract ¾ cup milk ½ cup unsalted butter, melted and cooled ½ cup chocolate chips Mi n i a t u r e marshmallows for topping, if desired Preheat oven to 400°F. Line muffin cups with cupcake liners. In large bowl, combine sugar, flour, hot cocoa mix, baking powder and salt. Set aside. In another large bowl, whisk together eggs, vanilla, milk and melted butter. (Make sure melted butter is cool before you add it.) Add flour mixture to egg mixture and mix well to combine. Add chocolate chips and stir until just combined. Fill muffin cups 3/4 full. If using marshmallows, add to top of each muffin cup, lightly pressing into batter. Bake 8 minutes. Reduce oven temperature to 350°F and bake another 10 minutes or until toothpick inserted in center comes out clean. Let cool 5 minutes in muffin tin then remove to wire racks to cool completely.
