Whipped Shortbread Cookies
Whipped Shortbread Cookies 1½ cup unsalted butter, softened ¾ cup powdered sugar ¼ tsp. salt 1 tsp. pure vanilla extract 2 cups all-purpose flour ¾ cup cornstarch Sprinkles for decoration Preheat oven to 300°F. Line baking sheets with parchment paper. In large bowl of stand mixer, cream butter and powdered sugar until light and creamy, about 2 minutes. Add salt and vanilla. Beat again to combine. Gradually add flour and cornstarch. Beat to combine, scraping down sides of bowl as needed. Use small cookie scoop to scoop dough into even rounds of dough. Place on prepared baking sheet, about 1 inch apart. Press lightly with fork dipped in sugar to prevent sticking. Top with sprinkles as desired. Bake 1820 minutes or until lightly browned. Let cool on pan 5 minutes. Transfer to wire racks to cool completely.
