Tomato Basil Bruschetta
2 cups grape tomatoes 2 cloves garlic, minced 1 Tbsp. avocado oil 1 Tbsp. balsamic vinegar ⅓ cup fresh basil, chopped Salt and pepper, to taste 1 baguette, sliced into ½” slices 2 Tbsps. avocado oil, for brushing Balsamic glaze, optional Dice tomatoes and place in bowl and mix in garlic, oil, balsamic vinegar, basil, salt and pepper. Cover and refrigerate to marinate 4-6 hours or overnight. Preheat oven to 400°F. Line baking sheet with parchment paper. Lightly brush baguette slices with avocado oil and place on prepared baking sheet. Bake 8-10 minutes or until lightly toasted. Spoon tomato mixture onto toasted baguette pieces. Drizzle with balsamic glaze, if desired, and enjoy!
