Sausage and Rice Skillet
2 16oz pkgs. smoked sausage, cut into 1/2-inch slices 1 medium-size yellow bell pepper, diced 1 small onion, diced 1 garlic clove, minced 2-3 cups chicken broth 2-3 cups brown rice, use same amount of rice as broth Salt and pepper, to taste 4oz Velveeta Queso Blanco Sauté sausage, onion and pepper in large skillet over medium-high heat 8 to 10 minutes or until sausage is lightly browned and vegetables are tender. Add chicken broth, stirring to loosen particles from bottom of skillet. Add rice and bring to boil. Season to taste. Reduce heat to medium-low, cover, and cook 10 minutes or until rice is tender. Add Velveeta and allow to melt. Taste and adjust flavor as desired.
