Slow Cooker Chicken and Wild Rice
1 22.6oz can healthy request condensed cream of chicken soup (lower sodium version) ¾ cup chicken broth 1 10oz pkg. shredded carrots 1 6oz pkg. uncooked seasoned long-grain and wild rice mix 2-4 chicken breast Salt and pepper and garlic powder, to taste Place Crockpot liner in slow cooker. Stir soup, broth, carrots and rice with seasoning packet in 6 quart slow cooker. Season chicken with salt and pepper. Add chicken and turn to coat or submerge if enough moisture. Cover and cook on LOW for 5 to 6 hours or until chicken is done and rice is tender. Check after 4.5 hours so it doesn’t cook too long and turn to mush. Season to taste. Sprinkle with chopped fresh parsley just before serving, if desired.
