Easy Shredded Chicken Tacos
2lbs chicken Taco seasoning to taste 1 medium onion, diced 8oz chunky salsa 4oz Velveeta Queso Blanco, cut into chunks Place Crock Pot liner in slow cooker. Season chicken to taste. Add diced onion and top with salsa. Cover and set on low 6-7 hours or high for 3-4 hours or until cooked through. Shred chicken and return to slow cooker. Add Velveeta and cook another 15 minutes or until cheese is melted. Serve topped with onion, tomato, shredded cheese or other taco toppings as desired. Serve with refried beans and rice to finish the meal.
