Honey Garlic Shrimp and Rice
⅓ cup honey ¼ cup soy sauce 2 garlic cloves, minced 1 tsp. minced fresh ginger 1lb medium uncooked shrimp, peeled & deveined 2 tsps. avocado oil 2 cups brown rice, prepared as directed on box Whisk honey, soy sauce, garlic, and ginger together in medium bowl. Place shrimp in large sealable container or zipped-top bag. Pour 1/2 of marinade/ sauce mixture on top, shake or stir to coat shrimp. Refrigerate at least 15 minutes, overnight will allow for more flavor. Cover and refrigerate remaining marinade. Heat olive oil in skillet over medium- high heat. Place shrimp in skillet. (Discard used marinade.) Cook shrimp on one side until pink, about 45 seconds, then flip shrimp over. Pour in remaining marinade/ sauce and cook until shrimp is cooked through, about 1-2 more minutes. Serve shrimp with cooked marinade sauce and a garnish of green onion on bed of brown rice. Add some steamed broccoli or butter carrots and dinner is served!
