Sausage Hash
2 Tbsps. butter 1 Tbsps. avocado oil 1lb white potatoes, peeled and diced into 1-inch cubes (2-3 medium) Salt & pepper to taste 1 small onion, diced 2 13oz pkgs. smoked turkey sausage 1 orange bell pepper, seeded and diced 1 tsp. garlic powder 1 tsp. paprika 1-2 eggs per serving 1 Tbsp. butter Add butter and oil to large skillet over medium heat. Add cubed potatoes in single layer. Season with salt. Cook for 5-7 minutes, stirring and turning often, until they are little more than halfway cooked through. Add onion and sausage and bell pepper. Season with black pepper, garlic powder and paprika and stir. Cook for another 3-5 minutes, stirring occasionally. Reduce heat, and continue cooking uncovered until potatoes are cooked through. Taste and adjust seasoning as desired. Melt 1 tablespoon butter in small skillet. Add one or two eggs and cook to taste. I made mine over medium. Cook 3-4 minutes on one side, flip egg without breaking yolk and cook another 2-3 minutes.
